Sleep times to enable Insights

If we have babies who do not keep regular bed or wake times. How do we choose a ‘put to bed’ and an ‘out of bed’ time that spans just one regular hour slot?
We never receive insights as the chosen sleep times rarely match up exactly with when my baby is put or taken out of bed.
